Ingredients:
1 cup Little Owl
3 cups white wine (about one bottle of wine)
1 to 2 fresh peaches, cut into pieces
Directions:
In a pitcher, combine the Little Owl, wine and peaches.
Best if left in refrigerator overnight.

3 parts Plumb Bee’s Knees®
1 part simple syrup
Bitters – 3 to 4 drops
Orange peel and cherry for garnish
Pour the simple syrup and Plumb Bee’s Knees® into a glass with ice cubes.
Add bitters and stir to combine.
Garnish with the orange slice and cherry.
1½ oz Hardware Distillery Aquavit
½ oz Cinnamon simple syrup*
2 dashes Orange Bitters
Chill before serving.
Garnish with an orange peel.
*Combine ½ cup water, ½ cup sugar, and 3 cinnamon sticks.
Cook until sugar dissolves. When cool, remove cinnamon sticks.
The leftover simple syrup can be stored in the refrigerator for about one week.

The Hardware Distillery Meowmosa is a variation of the Mimosa.
The second product to sit on our bar as a sweeter version of Bee’s Knees® Merry Cherry is “Hwy 101.” This spirit, which is a liqueur in nature but not in name, is made from Bee’s Knees® Merry Cherry with brown sugar and coffee added.
The coffee blend is “Hwy 101,” a proprietary blend from the Hoodsport Coffee Company, a neighboring business in Hoodsport.
Hwy 101 is a clean, crisp version of Kahlua and can be used in all your favorite cocktails that call for coffee liqueur.
The Cat’s Pajamas starts with Bee’s Knees® Merry Cherry, which is sweetened with bing cherry concentrate and cane sugar. The alcohol content is approximately 25 ABV (or 50 proof). It is the first product on our bar that is slightly sweet and under 40 ABV. The first batch is a fund-raiser for Kitten Rescue of Shelton, Washington, and $5 from the sale of each bottle will be donated to Kitten Rescue.
Some of you, who have been to the Hardware Distillery, might recognize Loki on the label which was painted by Distillery co-owner Jan Morris. Loki came to the Distillery from Kitten Rescue.
Use Cat’s Pajamas the same as any liqueur*–after dinner or any time a slightly sweet drink is preferred. We’ll have some recipes soon.
(*Sadly the the federal government–the TTB–won’t let us call Cat’s Pajamas a liqueur because of the high honey content.)
We are distilling a speciality spirit as a fundraiser for our local volunteer fire department.
The Distillery will donate $5 from the sale of each bottle to the Mason County Firefighters Association.
This specialty spirit is fermented and distilled at the Distillery, using prickly pear cactus and Yakima Valley pears. It is then infused with chile peppers from the Jalisco Tortilla Factory in Shelton. The chile peppers include Morita, Chile Arbol, and Guajillo. For added depth, Italian Piment D’Esplette is added.
The result is a spicy hot distilled spirit, much like a chile vodka. The first sip is spicy, and the Morita chile adds a smoky flavor that shows up at the end. Each batch will be different, due to variations in the spices.
This spirit can be used to make a spicy Bloody Mary, or any other cocktail that like a little spice in it.
It’s a distilled honey mead that starts as 80% honey and 20% fruit. All of our Bee’s Knees® are created with only the finest honey from Washington beehives and the finest fruit grown in Washington orchards.
We are one of the very few U.S. distilleries making a distilled mead, and when we applied for a label for this unique spirit, the federal permitting agency told us that we were not making a brandy, or anything else that they could define or pigeonhole. What we were making was something unique to us, and we had to find a unique name. We chose Bee’s Knees® because it’s made from bee honey and it is truly the Bee’s Knees, an extraordinary spirit.
The taste of our Bee’s Knees® is as unexpected as it is unique. It’s not sweet, never cloying, and, in fact, many people compare it to the taste of a fine whiskey.

PEACHY KEEN was our first Bee’s Knees®, and it is distilled from honey and peaches. It has a distinct yet smooth peachy flavor that you’re bound to fall in love with.

The next batch of Peachy Keen Bee’s Knees® will be distilled from Rich Lady peaches from Gilbert Orchards in Yakima, Washington. Rich Lady peaches have a warm yellow flesh, a rich dark red skin, and they smell delightful. This batch should be available in about 4 months.
